On the one hand, you could ignore her comments, but that would mean being labeled as passive aggressive and in denial; on the other hand, you could express your annoyance with her psycho-babble, but then you run the risk of being labeled as frustrated, anxious, or hostile.
Her tendency to do this is part of her personality, and this means that there is not much that you are going to be able to do about it. The best approach is to keep your interaction with her focused on work-related matters that deal with the content, timing, deadlines, and objectives of your projects. While your co-worker may then claim that you are in some kind of avoidance, the only thing that you should really avoid is unnecessary communication with her.
If you find that her actions are truly interfering with the work that needs to be done, then you should consider discussing the matter with your manager. Employees who waste excessive amounts of time psyching out their co-workers may actually psych themselves right out of a job.
